This chicken, lentil, and pear pasta dish is an absolute delight. Serve it hot or cold and enjoy it all year round.

Heat 1-2 tbsp oil in a large skillet over medium heat. Add chicken and cook for about 5-10 minutes or until chicken is no longer pink inside.

Meanwhile, cook pasta according to package instructions. When there is 1-2 minutes remaining on your cook time, add in the green beans to your boiling water and pasta. Before draining the pasta water, add the leeks to the bottom of your colander. Drain pasta and green beans over the leeks and return everything to the pot.

Add in your remaining ingredients (canned lentils, pear, and chicken) and pour the maple poppy dressing overtop. Stir to combine.

Serve at room temperature or chilled. Both are delicious!
