Ingredients
  • 2 cup gluten free flour
  • 1 cup sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup rice milk
  • 1 large egg
  • ½ tsp maple syrup or vanilla extract
  • ¼ cup canola oil
  • 1 pear (peeled thickly and grated)
  • extra sugar for sprinkling (optional)
Instructions
  1. Preheat oven to 350°F/180°C. Line a loaf pan with parchment paper and spray or brush with oil.
  2. In a mixing bowl, combine flour, sugar, baking soda, and salt. Whisk to combine. Add in the rice milk, egg, maple syrup, canola oil, and grated pear. Stir to combine.
  3. Pour batter into your prepared pan and sprinkle with about 1 tbsp of sugar if you’d like a crispy top.
  4. Transfer to the oven and bake for 45-50 minutes, or until a toothpick comes out clean. Allow to cool before slicing.
