Have you been craving a low salicylate salad option? Not only is this low salicylate salad with pear and chicken fresh and flavorful, it’s also really filling.

Ingredients
  • 2 cup iceberg lettuce (chopped)
  • 1 pear (peeled and chopped)
  • 1/2 cup shredded chicken
  • 5-10 raw cashews (chopped)
  • Pear Dressing
  • 1 (15 oz) can pears (in sugar and water)
  • 1 tsp citric acid
  • 2 tsp water
  • 1/2 cup oil (canola, safflower, sunflower all work)
  • 1 tsp salt
  • 1 tsp fresh chives (chopped)
  • 1/2 tsp garlic (or 1 clove) (minced)
Instructions
  1. Make your salad using all of the ingredients listed. Start with the lettuce, then add chicken, pears, and cashews.

  2. To make the dressing:
  3. Place the contents of the canned pears (pears and syrup) in a blender and purée until smooth.

  4. In a small bowl or jar, combine citric acid and water and stir to combine. Add pear purée and remaining ingredients (oil, salt, chives, and garlic) into the bowl and whisk or shake to combine.

  5. Pour desired amount over salad and enjoy!

  6. Dressing saves in the refrigerator for about a week (if it lasts that long).
